Pizza with Gosh! Sweetcorn & Quinoa Bites

We’ve been feeling inspired by Olio’s latest campaign #Cook4Kids, which supports over a million children who depend on school meals but aren’t able to access them whilst schools are currently closed.

Plant-based food brand Gosh! Food have created a range of delicious, vegan recipes in collaboration with social media wonder Kripa @15min_mom (and the help of her adorable girls), that are guaranteed to turn your kids into little chefs.

Pizza with Gosh! Sweetcorn & Quinoa Bites by 15min_mom

Curb your kids’ pizza cravings with this healthy (but just as delicious) alternative. Made simply from Gosh! Sweetcorn & Quinoa Bites, tomato sauce, fresh herbs and veggies all loaded on to a wholemeal tortilla wrap.

Ingredients

4 Gosh! Sweetcorn & Quinoa Bites
1 pack of tortilla wraps
1 tin of chopped tomatoes
100g baby spinach leaves
1 small red onion, diced
2 garlic cloves, finely chopped
1 tbsp oregano
1/2 tsp salt
1/2 tsp black pepper
250g buffalo mozzarella, grated
4-5 basil leaves, roughly chopped
2 tbsp olive oil

Method

  1. In a pan, heat the olive oil on a medium heat

  2. To make the pizza sauce, add the garlic and red onion and sauté for 1-2 minutes

  3. Add the tin of chopped tomatoes and season with salt and pepper to taste

  4. Add the oregano and chopped basil and stir well

  5. Spread the pizza sauce over the tortilla wraps

  6. Load up with as much grated mozzarella as you would like

  7. Cut the Gosh! Sweetcorn & Quinoa Bites into halves and dot around on the pizza wraps

  8. Grill in the oven until the cheese melts and the Gosh! Bites are warmed through

  9. Garnish with spinach leaves and serve hot
