Gosh! Sausage Salad Rolls by @15min_mom

We’ve been feeling inspired by Olio’s latest campaign #Cook4Kids, which supports over a million children who depend on school meals but aren’t able to access them whilst schools are currently closed.

Plant-based food brand Gosh! Food have created a range of delicious, vegan recipes in collaboration with social media wonder Kripa @15min_mom (and the help of her adorable girls), that are guaranteed to turn your kids into little chefs.

Convince the kids that salad is delicious with these spring veggie salad rolls. Made with Gosh! Veggie Sausages rolled up with fresh veggies and finished with a nutty dipping sauce.

Ingredients

Rolls:
1 pack Gosh! Veggie Sausages
12 rice paper spring roll wrappers
1 iceberg lettuce
2 avocados
30g or 1 handful coriander
1 small carrot

Greenut Sauce:
Made with peanut butter, lemon juice, soy sauce, coriander, green chillies and hot water

Method

  1. Chop up the iceberg lettuce

  2. Grate the carrot into thin strips

  3. Thinly slice the avocado

  4. Chop the coriander finely

  5. Mix together the Greenut sauce ingredients

  6. Heat the Gosh! Veggie Sausages with a little oil in a frying pan for 3-4 minutes

  7. Place some hot water in a deep dish and dip 2 rice paper wrappers, 1 at a time, for 5 seconds placing them one on top of the other like a double layer

  8. Lay out a little lettuce, grated carrot and 2 avocado slices in rows at the centre of the soft wraps

  9. Once the Gosh! Veggie Sausages have cooled down add one to each roll

  10. Sprinkle with coriander

  11. Add as much Greenut sauce as you like but no more than 1 tbsp so that it doesn’t ooze out of the wrap

  12. Roll your wraps tightly taking one end over the filling, tuck in the sides then pack tightly with your hands as you roll

  13. Serve with chilli dip or more Greenut sauce
